Moroccan Tagine

You will need:

  • lamb pieces2 lbs of lamb, cut into 2-inch pieces
  • chopped onions2 onions, finely chopped
  • minced garlic4 cloves of garlic, minced
  • ground coriander2 tsp of ground coriander
  • ground cumin2 tsp of ground cumin
  • ground turmeric1 tsp of ground turmeric
  • ground cinnamon1 tsp of ground cinnamon
  • dried apricots1 cup of dried apricots, chopped
  • vegetable broth4 cups of vegetable broth
  • canned chickpeas1 cup of canned chickpeas, drained
  • chopped carrots1 cup of carrots, chopped
  • salt and pepperSalt and pepper to taste
  • fresh corianderFresh coriander for garnish

Instructions

  1. Start by seasoning the lamb with salt and pepper.
  2. In a large pot, brown the lamb on all sides and remove it from the pot.
  3. In the same pot, add the onions and garlic, and cook until soft.
  4. Add the ground coriander, cumin, turmeric, and cinnamon to the pot, stirring well to combine with the onions and garlic.
  5. Return the lamb to the pot, add the chopped apricots and vegetable broth, and bring to a simmer.
  6. Cover the pot and let it simmer for about 1 hour.
  7. Add the chickpeas and carrots to the pot, and continue to simmer for another 30 minutes, or until the lamb is tender.
  8. Season with additional salt and pepper if needed, and garnish with fresh coriander before serving.
